Francis Mallmann Is Coming to Egypt to Host Dinner on the North Coast

Award-winning Argentine chef Francis Mallmann trained in French haute cuisine before building his reputation by leaving the conventional kitchen altogether. On August 7th, he brings his celebrated open-fire cooking to One Almaza Bay, Almaza Bay’s fully serviced beachfront residential experience, for an exclusive waterfront dining experience curated by Flavor Republic Ventures.

Mallmann suspends ingredients above flames, presses them against hot iron or holds them between two fires until their surfaces blacken and flavours deepen. He has cooked in Patagonian snow, on remote islands, across vineyards and beaches, allowing each landscape to shape the food it produces. His cooking is guided by the belief that fire and place are as important as the ingredients themselves.

That philosophy also finds common ground with Egypt’s own Bedouin culinary traditions, where cooking over open flames, embers and cast iron has long been central to preparing food in the desert. While the traditions developed independently, both treat fire not simply as a cooking method but as the foundation of the dining experience, allowing landscape, heat and time to shape every dish.

That emerged from Mallmann’s rejection of his formal training. After studying a French tradition shaped by Alain Chapel and Paul Bocuse, he turned to South American techniques built around embers, planchas and the infiernillo. His 2009 book Seven Fires codified the approach, while Chef’s Table introduced his cooking to audiences around the world.
