This charming anime-inspired ramen joint is the brainchild of chef Amr Mostafa, whose love for Japanese animation sparked a passion for ramen that led him on a years-long quest to master the art.
"I'm an engineer, 46 years old, and the founder of Ichimiro. I spent most of my life in the corporate world, always yearning for a personal project that I could truly enjoy," Ichimiro Ramen’s founder Amr Mostafa tells Scene Eats, reflecting on his journey to creating Ichimiro Ramen in New Cairo.
Mostafa's story began when he enrolled in a course called 'Passion to Profit' and discovered anime was his true passion. "I have an immense love for anime. It's a world where I lose myself entirely," he shares with Scene Eats. Mostafa became enamoured with ramen after seeing its prominence in iconic anime like Naruto. "I realised people have a deep affection for ramen, and it wasn't readily available in Egypt. So, I embarked on a mission to create an authentic halal Japanese ramen experience."
This endeavour took eight months of relentless trials and errors, involving contacts and ingredient sourcing from abroad. Mostafa opened Ichimiro as a cloud kitchen in 2020. "I still remember the exhilaration of receiving my first order back in October 2020, which quickly became a source of pride and joy."
In February 2023, Ichimiro opened its physical restaurant in New Cairo, transporting diners into the vibrant world of anime, with artwork paying homage to Japanese culture and anime music setting the mood. The menu features several types of ramen including Chicken Shio, Shrimp, and Shyou, but the eatery’s signature Beef Ramen is what truly exemplifies Ichimiro's dedication to authenticity.
For Mostafa, Ichimiro represents the intersection of his lifelong passions. "It's more than just serving customers, it's about sharing a passion, forging friendships and creating lasting connections. Ichimiro has given me not just a business but a community."
