Who inspires the chefs who inspire the rest of us?
We asked Executive Chef José Luis Hinostroza, the force behind Arca, the Tulum restaurant ranked No. 22 on Latin America's 50 Best Restaurants 2025, to name the people who have most influenced his cooking, i.e "Your Favourite Chef's Favourite Chef". His answers span some of the industry's biggest names - including fellow Mexican chef David Castro Hussong and Noma's René Redzepi - but the conversation ultimately returns to two people who shaped him long before the world's best kitchens did: his older sister and his mother.
Hinostroza is currently in residence at WHEN WE EAT at Ramla by MARAKEZ, hosted at Moga, where he has temporarily relocated Arca to Egypt's North Coast until August 2 as part of Egypt's first global restaurant residency programme, created by Flavor Republic. Kinoya follows from August 11–15, before Three Bros concludes the summer series from August 20–25.
