Tarb, for the uninitiated, is Egypt’s greatest plot twist: kofta wrapped in fat. It’s meat inside more meat, the culinary equivalent of wearing two coats in August. Normally, you eat it grilled off a skewer, dripping everywhere, and then you take a nap. Hankology - located in Sheikh Zayed and Nasr City - decided this wasn’t nearly dangerous enough, so they made it into a burger. Picture a patty that’s already kofta, swaddled in fat, then flattened and shoved between two buns. The result is less “burger” and more “edible dare.” But the flavour? It’s the exact same smoky, greasy, glorious tarb Egyptians know — just handheld and Instagram-ready.
