Palestinian street food spot Hummus & Go have been operating a pair of pop-ups on the bustling streets of Korba in Heliopolis and at high-end pizzeria Olivo Palm Hills in Sheikh Zayed, offering suhoor every evening until the very last night of Ramadan.
After opening for Ramadan in Rehab City in 2022, and then popping up in New Cairo in 2023, Hummus & Go’s latest locations continue to make hummus in all shades - think basil, red pepper, beetroot and Avocado (if you can dream it, they can hummus it!) - for a sumptuous and culturally rooted suhoor.
There’s only a few more evenings left until the holy month comes to a close, so we went out to squeeze in one more suhoor with Palestinian shakshouka at their Korba location, where we found ourselves surrounded by bespoke graffiti that symbolises Palestinian resistance…
